Yesterday we spent a very cozy evening at @rowhous Yesterday we spent a very cozy evening at @rowhousegrocery, cooking and talking all things protein! We explored the many sources of protein, including our favorite go-to protein-packed meals. It all ended with the most delicious black bean burgers made from scratch. 🤤

You're invited to join us for our next class at Rowhouse Grocery (1713 McKean St) on Tuesday, December 19th to cook another nutritious meal together while chatting all things calcium! Meet Jae! 🤩 Jae is a student at W.B. Saul High Meet Jae! 🤩

Jae is a student at W.B. Saul High School in Philadelphia. When Jae first joined Vetri Cooking Lab (VCL), she was already a talented home cook, but wasn't always so comfortable cooking and eating vegetables. 

"Before starting Vetri Cooking Lab, I would say I was pretty picky," Jae said. "I didn't like cilantro, eggplant, or citrus on my food, but now, I'm so much more comfortable with those things. There are times when I want vegetables like zucchini."

Because of the teamwork-oriented aspect of the program, Jae also learned quickly to be a team player and a leader. Jae is one of thousands of people that Vetri Community Partnership serves each year. TOFU, TOMATO, AND SPINACH SOUP Ingredients: • TOFU, TOMATO, AND SPINACH SOUP

Ingredients:

• 1 teaspoon vegetable oil
• 1/2 cup onion (chopped)
• 1 garlic clove (minced)
• 6 cups veggie broth
• 1 package tofu, silken, firm or extra firm (pat dry and cut into 1/2 inch cubes)
• 2 tomatoes (chopped)
• 3 green onions, chopped (3 stalks, optional)
• 4 cups spinach leaves, fresh
• 1 tablespoon soy sauce, reduced sodium
• 1/4 teaspoon ground black pepper
• 1/4 cup cilantro leaves

Instructions:

1. Heat a saucepan over medium heat; add oil and chopped onion. Cook onion until softened, but not brown. Stir in garlic and cook just until fragrant.

2. Add soup broth. Bring to a boil. Add tomatoes and tofu. Lower heat and simmer until tomatoes are soft but not mushy (this takes just a couple of minutes).

3. Stir in green onions (optional), spinach, ground pepper, and cilantro. Cook just until spinach is wilted.

4. Remove from heat. Taste for seasoning. Serve hot.

Our community cooking classes aren't just a safe s Our community cooking classes aren't just a safe space to learn how to cook; they're a third place, or a place (that's not home, work, or school) where folks can come to connect with others over a shared activity. Our community cooking classes are multigenerational, a place where families can get together twice a month to cook together, laugh together, and eat together. Oftentimes, we see neighbors come alone too! But by the end of class, everyone is together, chatting while they eat family-style at the same table. 

Beyond teaching folks how to cook, we believe in fostering a sense of belonging. The holidays can be a joyful time as much as it can be the opposite for some folks. That's why we invite you to join us on the first and third Tuesdays of each month to our community cooking classes! These classes are free of charge (and we make the most delicious food!). It was so wonderful to come together and cook, lau It was so wonderful to come together and cook, laugh, dance, and eat with everyone who participated in our Cooking for Heart Health series these last four weeks! 

Each of these classes included a lesson paired with four supporting recipes. The last lesson of the series focused on the Mediterranean diet, and to support this lesson, we made Misir Wot, Fossolia, Ethiopian Green Salad, and Olive Oil Cornmeal Cake. We watched each of the participant’s cooking skills grow each week, and when talking to Miss Olivia, she was excited to report, “I learned so much! I learned how to peel and cut garlic. And it’s the little things, but the little things are really the big things when learning how to cook!”
