One of the requests we hear most often in our clas One of the requests we hear most often in our classes is to include more dessert recipes in our programs. While you may not think of dessert as an opportunity for added nutrition, it can be the perfect time to get your recommended daily serving of fruit! 

Not only are fruits naturally sweet and delicious, they are also chock-full of nutrition like fiber and various vitamins and minerals. 

#DidYouKnow that a single orange can contain as much as 91% of your daily value of vitamin C? Our recipe for Olive Oil Cornmeal Cake makes use of the aromatic zest of an orange and is served with the fruit on top. You could also try making Grilled Pineapple (pineapples provide tons of manganese and other antioxidants).

This semester our students gained new culinary skills, cooked up nutritious and delicious recipes and built up their confidence in the kitchen! 

While they had a great semester, it is always a bittersweet feeling when it comes to an end. As one of our students put it: “I’m going to cry because I don’t want the cooking class to end!”

This morning our Mobile Teaching Kitchen team spen This morning our Mobile Teaching Kitchen team spent a few hours with our friends at @zieglerelementary, teaching them all about how to make a tasty kale salad with our homemade dressing! 

This quick and nutritious salad is a delicious lunch option for the upcoming summer season ☀️

#DidYouKnow it also National Salad Month?! Our students at @zieglerelementary have been growing kale and bell peppers (along with many other veggies) this spring in their school garden, so they are more than ready for summer and to celebrate National Salad Month with a new and tasty recipe ✅

Happy Friday! With warm weather approaching, the Happy Friday! 

With warm weather approaching, the idea of cooking and eating hot pasta dishes or noodle soups can seem less and less appealing. But #DidYouKnow that whole grains like whole wheat noodles can provide a filling and nutritious base for your meals? So, try making our Chilled Peanut Noodle Salad! This recipe calls for crunchy cucumbers and carrots, but can be topped with any vegetables you love and have on hand. The peanut sauce is creamy, savory, and super versatile.

If you want to take advantage of an abundance of spring herbs, another way to go is to check out our recipe for Chimichurri Pasta Salad, a bright, green, and delicious dish perfect for barbecues and potlucks! 🥕🥒
